Translating as “land between rivers”, the Aquiares Estate and Community is found by the Aquiares and Turrialba rivers, high on the slopes of the active Turrialba volcano. Environmental stewardship and a commitment to innovation have been cornerstones of the estate since Alfonso Robelo took over in the late 1980s, and today his son Diego continues that legacy.

The Aquiares estate continues to push the boundaries of Costa Rican coffee under the leadership of Diego Robelo, through careful experimentation with processing while maintaining the exceptional quality the farm has become known for. The estate spans over 900 hectares, with around 200 hectares protected as native forest, reflecting a long-standing commitment to biodiversity and sustainability.

This coffee was grown in the lush, high-altitude landscapes of Banko Gotiti, in the Gedeb woreda on the southern edge of Yirgacheffe. Cultivated by smallholders who typically tend plots of 1 to 2 hectares at 1950-2100 masl, these farmers maintain traditional ‘coffee gardens’ where landrace varieties are intercropped with false bananas and indigenous shade trees. This district is celebrated for producing some of the best Ethiopian coffees, with high elevations and agroforestry systems contributing to an elegant, expressive cup profile.

At the helm of the Caballero Estate is Marysabel Caballero and her husband Moises Herrera. Marysabel is a third generation coffee farmer, who took on the family estate from her father, Don Fabio Caballero. Don Fabio had inherited this land from his father before him, who was a pioneer in coffee cultivation in Honduras. The estate is located in Marcala, South East Honduras - an area widely regarded as the best in the country for growing coffee due to its high altitudes and excellent soil quality. Caballero now spans almost 200 hectares amongst 100 hectares of forest, and is separated into 17 farms.

Circles comes from Fazenda Trapia in the Mantiqueira de Minas region, where Yellow Bourbon is naturally processed at around 1,200 masl. It is a steady, approachable coffee shaped by mountain-grown sweetness and careful farm work.

A Colombian decaf from Huila, grown by smallholder farmers around 1,700 masl and decaffeinated using the sugarcane EA process. It keeps the structure and sweetness of the region while offering a caffeine-free cup.

Aquiares Estate sits on the fertile slopes of Costa Rica's Turrialba Volcano and remains one of the country's most progressive coffee farms. Internationally recognised for its commitment to sustainability, the carbon-neutral estate balances coffee production with environmental research, biodiversity and long-term community investment. Entre Ríos, meaning 'between rivers', is a blend of Marsellesa and Red Obatá varietals, developed to showcase Aquiares' terroir through an exceptionally sweet, balanced and approachable cup.

Marysabel Caballero and Moises Herrera have been repeatedly recognised and awarded for cultivating exceptional coffee in Honduras. Together, the husband and wife team run the 200-hectare Caballero Estate, which they have divided into 17 different coffee farms and a wet mill called Xinacla - the central mill where they receive, document and process all their coffee. The pair are wholly committed to sustainability and biodiversity across the farms, with a sharp focus on soil quality. They produce their own organic fertilisers, and intercrop coffee with shade plants and native fruit trees.

Chelbesa Washing Station is found in Gedeb at 2100 masl, in the celebrated Yirgacheffe region of south-eastern Ethiopia. Yirgacheffe translates as the ‘land of many springs’, and the area’s unique combination of topography, altitude and water sources, matched with traditional growing and processing practices, creates the perfect conditions for growing their world famous coffees. The station purchases coffee from over 600 local farmers, many of whom are multi-generational smallholders growing indigenous Ethiopian varietals on tiny plots of 0.5-2 hectares. The farms are all located within a 40 minute walking distance of the station.

Ruera Estate lies in Juja Sub County, Kiambu County, on gentle rolling hills at 1577 masl. The 190 hectare estate cultivates Kenya’s renowned SL28 and SL34 varietals, alongside the newer, disease-resistant Batian and Ruiru 11. Unlike many Kenyan coffees, which come from hundreds of smallholders and cooperative stations, Ruera is a single estate operated by Coffee Management Services (CMS). Coffee is grown, harvested and processed by a single team, allowing quality to be monitored across every stage of production. The estate employs over 300 local residents each day, with around 30% living on site.

Unit Fourteen is a washed Peruvian coffee from the highlands around Jaen in Cajamarca, bringing together Bourbon, Catimor and Typica varieties. High elevation and smallholder production give it a clean, dependable profile for everyday brewing.
