#0005 Colombia Jairo Arcila Peach Co-ferment - 150g

Peach CordialHoney Blossom

Roaster notes

Limited to just 400 bottles! The fifth coffee in our Microlot Project comes from third generation Colombian farmer Jairo Arcila, who some of you may know from our Rare Range of coffees. Jairo works with his sons to produce high quality specialty coffees at their farm, Santa Mónica. This Pink Bourbon lot undergoes an extensive processing protocol, with peaches added to impart their distinct stone fruit flavours and wine yeast used to enhance the fermentation process, adding complexity and depth. Co-ferments are hard to get right, but this one absolutely jumped off the cupping table!

Process Washed

Only 600 bags! Every one comes with an exclusive sticker. Created to celebrate the annual Colombian Flower Festival, this limited-release blend brings together two Colombian coffees that showcase the depth and richness the country is famous for. The first is a washed community lot from the producers of Risaralda, delivering classic notes of red fruit and brown sugar. The second comes from the renowned Café Granja La Esperanza, adding extra complexity and sweetness in the cup. Roasted to a medium-dark profile, this one's built for espresso, but equally at home as a punchier filter. Expect flavours of black cherry kirsch, caramel and a lingering cocoa finish.

From the home of coffee itself, comes this washed lot from the Doyo Co-operative. The heirloom varietals grown here represent the legacy of coffee growing in this region - classic flavours and high desirability. This coffee was roasted to pull out the complex sweetness of sweet and salty malted milk chocolate whilst retaining a deep fruit note of raisin and subtle citrus flavour.
