A slower, paper-filtered recipe for a clear cup with a soft, elegant body.
Chemex rewards patience. The thicker filter removes more oils, so a steady pour and a not-too-fine grind help the brew stay lively rather than flat.

The brew
Follow the pour, then taste
- 01Heat water to 94°C (201°F).
- 02Fold Chemex filter, place, rinse.
- 03Add 30g medium-coarse ground coffee.
- 04Pour 60g water for bloom (45s).
- 05Slowly pour remaining 440g water in circles (4:00-5:00 min total brew).
- 06Remove filter, swirl, and serve.
