Chemex

A slower, paper-filtered recipe for a clear cup with a soft, elegant body.

Chemex rewards patience. The thicker filter removes more oils, so a steady pour and a not-too-fine grind help the brew stay lively rather than flat.

The brew

Follow the pour, then taste

  1. 01Heat water to 94°C (201°F).
  2. 02Fold Chemex filter, place, rinse.
  3. 03Add 30g medium-coarse ground coffee.
  4. 04Pour 60g water for bloom (45s).
  5. 05Slowly pour remaining 440g water in circles (4:00-5:00 min total brew).
  6. 06Remove filter, swirl, and serve.
